Theresa Booth is a director of the Chopsticks Club, founded in 1993. In 2017 she set up the Engage with China charity, to build China literacy in UK schools. She has a legal background, having trained and practised as a lawyer in London and Hong Kong, specializing in corporate finance.
She first visited China in 1983, and lived there permanently between 1992-97, where she set up Beijing's first sandwich business, Deng's Deli. She sold the business by way of a management buyout in 1997. She has a MSc in Energy, Environmental Technology & Economics.
